Chocolate Peanut Butter Chia Seed Parfait {you’re gonna love this}

This is the second batch of chia seeding pudding I’ve ever made and it just keeps getting better and better!

As you may have seen on my favorite foods list, I LOVE peanut butter and bananas… and who doesn’t love chocolate? This chia seed parfait is a combination of all three!

I’ve been dreaming about making this since Sunday night (yes, I think about blog recipes before falling asleep). I figured replacing the vanilla almond milk with chocolate almond milk (see my vanilla almond chia seed pudding recipe) would put a whole new spin on things!

This parfait is a perfect dessert, sweet and creamy yet extremely healthy!

Chocolate Peanut Butter Chia Seed Parfait {you’re gonna love this}


Yields: 4 servings // Prep time 10 minutes // Refrigeration time 4 hours

Ingredients:

  • 1/4 cup raw chia seeds
  • 1 cup chocolate almond milk
  • 1 cup plain non-fat Greek yogurt
  • 1 tsp pure vanilla extract
  • 1 Tbsp peanut butter
  • 1 Tbsp pure maple syrup

Toppings:

  • Strawberries, diced
  • Bananas, diced
  • shredded coconut
  • unsweetened cocoa powder
  • 1 Tbsp peanut butter

Directions:

  1. Add chia seeds, yogurt, almond milk, vanilla, peanut butter and maple syrup to a medium sized bowl. Whisk to combine.
  2. Cover the bowl tightly with plastic wrap and refrigerate for at least 4 hours, stirring occasionally. For best results, let the chia pudding refrigerate overnight.
  3. When it’s ready (it will thicken and turn into a pudding) place in serving dish. Put peanut butter in a microwave safe bowl and microwave for 15 seconds. Pour peanut butter over the top and add strawberries, banana, cocoa powder and coconut.
